Super Spare Ribs
The World Famous Swartz Spare Ribs - To Die For....  


SWARTZ SPARE RIBS


QUANTITY
                            INGREDIENTS

 (1) 19.5 oz bottle.................... 'Texas Best' brand sweet & sour barbecue sauce

 1 teaspoon............................... toasted sesame seed oil

 4 tablespoons......................... soy sauce

 2 tablespoons......................... chopped garlic  ( prepared garlic in oil ok to use )

1 teaspoon............................... finely chopped ginger ( bottled type ok to use )

2 tablespoons......................... Chinese plum sauce

2 tablespoons......................... peanut oil ( vegetable oil ok )

2 tablespoons......................... balsamic vinegar ( red or white vinegar ok but not as good )

1 medium................................. finely chopped onion


Combine plum sauce, oil and vinegar together.  Mix well until mixture is smooth.  Combine rest of ingredients.

Add spareribs and cover all over with marinade.  Place in refrigerator 8-12 hours ( over night ).

Pre-heat grill on high 5 min.  Cook ribs on grill 5 min. each side on high to sear.

Turn off one side of grill and turn other side to lowest setting.  Place ribs over OFF side of grill.  Cook for 2 hours with cover closed.  Turn every 10-15 min.  Brush ribs with remaining marinade as they cook and splash some on flame side of grill for smoke. Close grill.

OPTIONAL:  For extra flavor, soak mesquite or hickory wood chips in water.  Wrap in aluminum foil and poke holes in foil.  Place under grill on coals ( on flame side of grill ) after ribs have cooked for 45 min.
