Round Loaf

3 Cups Flour

1.5 Cups water

.25 TSP Instant Yeast

.25 TSP Red Wine Vinegar

.75 to 1.0 TBSP Salt

Mix yeast and vinegar into warm water.  Mix flour and salt in a bowl.

Stir wet and dry ingredients together until well combined.

Cover and allow mixture to rise for at least 4 hours at room temperature.

Fold dough onto itself a few times and pour onto oiled parchment paper.

Rinse mixing bowl and place parchment paper and dough back into bowl.

Cover and allow it to rise for 1 hour.  Preheat oven and heavy covered pot to 450F

Remove heated pot from oven and place parchment paper with dough inside into the pot.  Cover and cut away excess parchment paper.  Return it to the oven and bake for 30 minutes.

Uncover the pot and bake for 12-15 minutes longer.  Remove from oven and place on cooling rack.

Remove parchment paper and allow to cool for an hour before slicing.
